Chickpea Curry
Now I'm not one for vegetarian dishes but chickpeas are a decent replacement for meat, as well as a good source of protein.
This curry dish is both warming and comforting and takes hardly any time to make.
This recipe below will feed 2 very hungry people or 4 people if you're feeling peckish.

The ingredients you'll need are:
2 Carrots
1 White Onion
2 Garlic Cloves
Small Knob Of Ginger
1x 400g Tin of Chopped Tomatoes
1x 400g Tin of Chickpeas
Chopped Coriander
1 Vegetable Stock Pot/Cube
1 TBSP Curry Paste (Tikka, Madras, Balti, Korma)
Any of these pastes will do, I think I used Balti.
1.Get your pan on the heat with a little oil in, chop up the peeled ginger, onion, garlic & carrot. Add them to your pan and fry gently until the carrots start to become softer.
2. Add the curry paste and mix together with the veggies in the pan.
3. Add the chopped tomatoes and cook until they are slightly bubbling.
4. Add either your stock pot or stock cube. If you're using a stock cube then dissolve it first in a little boiling water.
5. Open the tin of chickpeas but remember to rinse them with cold water. Add them to your pan, let them cook and soften in the pan.
6. Just before serving, add the coriander to the pan.
This recipe can be served with some rice or a naan bread or something.
Also you could mix up the veg that goes into it, maybe throw in some spinach at the end as well.
