Mixed Fruit Crumble Muffins
This recipe combines two classic sweet treats, muffins & crumble!
By adding a crumble mix to the top of your muffins before baking them gives them an extra crunch!

This recipe makes 16 muffins!
The Ingredients you'll need are:
Cake Mix
200g/7oz Butter, Softened
200g/7oz Light Brown Sugar
2 Eggs
280g/10oz Self Raising Flour
1 Teaspoon of Cinnamon
100ml of Milk
220g/8oz Dried Mixed Fruit
80g/3oz Glace Cherries
Crumble Mix
140g/5oz Plain Flour
80g/3oz Light Brown Sugar
80g/3oz Butter
1. Preheat your oven to 160oC/gas mark 4 & place 16 muffin cases in your tin.
2. Firstly to make the cake mix! Cream together the butter & sugar and then add the eggs one by one.
3. Add the flour & cinnamon and combine with the butter mix.
4. Stir in the milk, add the fruit and when it is looking evenly combined, pour the mix into your muffin cases.
(Helpful Hint! - Use an ice cream scoop to fill the muffin cases, it is a lot quicker & easier. Not to mention a lot less messy!)
5. To make the crumble mix! In a bowl, rub together the flour, sugar & butter until they resemble a breadcrumb consistency.
Cover each muffin with a layer of the crumble mix, pressing down lightly.
6. Bake for 20 minutes until golden brown and leave them to cool on a wire rack.
