Pan Fried Salmon with Chorizo, Tomatoes and Potatoes

Ingredients


2 Salmon Fillets,

3 Medium Sized Potatoes,

200g Red & Orange Tomatoes, (On the vine work well)

100g Chorizo, (About half a sausage)

Basil Leaves, (To garnish)

Seasonings: Salt & Black Pepper,

Vegetable Oil.



Directions


1. Pre heat the oven at 180 degrees / Gas mark 4. Prepare the potatoes, cut them into slices and place them into a large enough mixing bowl. Drizzle the potatoes in oil and season with salt and pepper and toss. Place them individually on a baking tray lined by baking paper and roast for 15 minutes.


 

2. While the potatoes are roasting, prepare the tomatoes by halving them and also putting them onto a tray, season with salt and pepper. Also prepare the chorizo by slicing and leaving to one side until cooking time.


 

3. As the potatoes are looking partly cooked, put the tomatoes in the oven.


 

4. Place a frying onto heat and drizzle in some oil. When the oil is hot enough, place the salmon skin side down and cook. (There should be a sizzle when the fish touches the oil)


 

5. Cook until the sides of the fish start to turn white, flip onto its flesh side. At the same time put the chorizo into the pan to fry.


 

6. While the fish finishes cooking, it’s time to plate up. Layer the potato slices first, then scatter the tomatoes. By this time the chorizo and salmon will be done. Add the chorizo to your dish and lay the salmon top.


 

7. Garnish with some fresh basil leaves and enjoy!
