Mint Aero Rock Cakes



Rock cakes!! Traditionally made with dried fruit but with this recipe I used chocolate, specifically mint aero bubbles.


Now this recipe is very versatile as the chocolate used does not have to be the aero mint.


So follow this recipe, make a cuppa tea and it will go down nicely!


 


This recipe will make 12 rock cakes.


So... the ingredients you will need are:


3oz / 85g of butter

9oz / 255g of self raising flour

3oz / 85g of caster sugar

5oz / 140g of aero mint bubbles

1 egg

2/3 TBSP of milk


 

1. Preheat your oven to 160. Rub together the butter and flour until it resembles a breadcrumb consistency.


2. Chop the aero bubbles in half and add those to the mix, as well as the caster sugar and mix slightly.


3. Add the egg and mix and then gradually add the milk until it begins to form a soft dough, almost like cookie dough. (Give it time to mix though, do not be fooled into thinking that you will need more)


4. Either scoop into small balls with a ice cream scoop. Or using your hands pick up a small portion of the mix and roll into balls with your hands. Place them onto a tray lined with baking paper, keeping them a distance apart.


5. Bake for 12-14 minutes, or until golden brown. Leave on a wire rack to cool and enjoy!!!
